Pesto Clam Udon Noodles

- 8 ounces pesto
- 1½ pounds udon noodles
- 1 pound cooked frozen clam meat, thawed
- 5 cloves garlic, sliced
- 1 bunch scallions, chopped
- ¾ cup Parmesan
- Salt and pepper
Step 1. In a pot, boil the udon until cooked (1 minute). Drain and set aside.
Step 2. Using the same pot, cook the pesto, garlic, and the whites of the scallions over medium heat for 2 minutes. Add the clams and cook for another minute.
Step 3. Toss udon into the sauce and combine. Season with salt and pepper. Mix in the Parmesan. Garnish with the greens of the scallions. Serve immediately.
