Easy Apple Galettes with Puff Pastry

These galettes look and sound fancy, but are super easy to make. Bring them to your next summer potluck and they are sure to impress.

Ingredients
  

  • 3 large Granny Smith apples, sliced into ¼-inch-thick slices
  • 2 sheets puff pastry, thawed and cut into 12 rectangles
  • 2 tablespoons sugar
  • stick butter, cut into ½-inch cubes
  • 6 ounces apricot preserves

Instructions
 

  • Step 1. Preheat the oven to 400°F and line two baking sheets with parchment paper.
  • Step 2. Place the puff pastry onto the baking sheets. Begin assembling the galettes by placing overlapping slices of apples diagonally across each piece of pastry. Sprinkle the sugar evenly over the apples and dot with the butter cubes (see note #2). Bake the galettes for 40 minutes.
  • Step 3. While the galettes are baking, start preparing the apricot glaze by combing the apricot preserves and four tablespoons of water in a small sauce pan. Heat and stir until the mixture is loose. Once the galettes are done, brush them completely with the glaze (see note #3).
  • Step 4. Allow the galettes to cool. Serve warm, at room temperature, or with a scoop of ice cream on top!

Notes

  1. Puff pastry can be temperamental! To prevent it from melting at room temperature, work fast and do not place on top of or near the oven. 
  2. The butter and sugar will help the apple caramelize and give you that gorgeous golden brown color. 
  3. The glaze gives the galettes the fancy, glossy appearance that you see in most store-bought pastries.
