Ingredients

  • 1 can Spam, sliced lengthwise into 8 even slices (I used the reduced sodium version)
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon water
  • 4 cups cooked sushi rice
  • 3 sheets nori, cut into 8 strips

Instructions

  • Step 1. Sear the Spam in a pan over medium heat. Cook each side for 2-3 minutes until it's crispy and has a golden brown color.
  • Step 2. Mix together sugar, soy sauce, and water in a small bowl. Pour mixture into the Spam and swirl to evenly distribute. Let the Spam simmer in mixture until the liquid is absorbed (1-2 min). Flip once in between.
  • Step 3. Take the Spam out of the pan and let cool before handling. Meanwhile, clean the Spam can, let dry, and line with plastic wrap.
  • Step 4. Place ½ cup of rice into the lined can and a slice of Spam on top of the rice. Pat the rice and Spam down tightly to help the musubi form its shape. Then, lift plastic wrap out of the can to take out the musubi and finish by wrapping a slice of nori around it. Repeat this step for the rest of the Spam slices. Serve immediately.
