Elevate your instant ramen using just one pot and 15 minutes. It’s satisfying, hearty, full of umami, and simply delicious.
Especially with working from home these days, instant ramen has become a weekday lunch staple for me when I want something quick, delicious and with minimal cleanup.
I’ve tried many different brands of instant noodles in my days, ranging from low- to high-end and from different countries, but I always find myself coming back to the Shin Black ramen. The beef bone broth in this ramen is so rich and decadent that you already feel like you’re eating something substantial without even jazzing it up.
But we’re going to jazz it up and turn it into a nutritious flavor bomb. Let’s get to it!
Upgraded Instant Ramen with Poached Eggs
Ingredients
- 2 Shin Black ramen packs
- 6 cups unsalted chicken bone broth
- 2 stalks scallions, chopped
- 1 tablespoon chili sauce
- 1 cup baby arugula
- 2 large eggs
- ½ can SPAM, cut into ½-inch slices
Instructions
- Step 1. Without adding any oil, sear the SPAM slices on both sides in the pot on high heat until golden brown and then take them out.
- Step 2. Add the chicken bone broth directly into the pot with the remaining SPAM grease.
- Step 3. Once boiling, lower the heat to medium and add all the ramen seasoning packets, the whites of the scallions and the ramen into the broth. Cook for 4 minutes then take out the noodles.
- Step 4. Crack the eggs into the broth and poach for 2 minutes.
- Step 5. Assemble each bowl by adding the ramen first, followed by the broth, then top it all with 2 slices of SPAM, ½ cup of arugula, a handful of the greens of the scallions, a poached egg and ½ tablespoon of chili sauce. Serve immediately.
