This recipe might sound a bit weird, but I promise it’s going to be bomb. I first came up with this recipe out of necessity when I needed to throw together a weeknight dinner with what I had on hand. I was originally hesitant about posting it because it doesn’t sound like anything anyone has ever heard of before. I mean, is it even a real recipe? But to be honest, I’ve made this dish so many times since then and it’s one of the best things I’ve ever created. It’s so simple, flavorful, and comforting. I hope you enjoy!
Pesto Clam Udon Noodles
Ingredients
- 8 ounces pesto
- 1½ pounds udon noodles
- 1 pound cooked frozen clam meat, thawed
- 5 cloves garlic, sliced
- 1 bunch scallions, chopped
- ¾ cup Parmesan
- Salt and pepper
Instructions
- Step 1. In a pot, boil the udon until cooked (1 minute). Drain and set aside.
- Step 2. Using the same pot, cook the pesto, garlic, and the whites of the scallions over medium heat for 2 minutes. Add the clams and cook for another minute.
- Step 3. Toss udon into the sauce and combine. Season with salt and pepper. Mix in the Parmesan. Garnish with the greens of the scallions. Serve immediately.
