My biggest cooking philosophy is to keep dishes simple and use high-quality ingredients. I love letting the ingredients shine and that’s why this simple tomato salad epitomizes my philosophy. With just four ingredients — fresh tomatoes, basil, extra virgin olive oil (EVOO), and burrata — this dish is so simple but eats like an appetizer from a bougie restaurant. BTW, the burrata is so creamy and decadent that it helps take this salad to a whole new level.

Since summer is tomato season, you can easily find super juicy and sweet tomatoes at most grocery stores and farmers’ markets. I find heirloom tomatoes the best to use for this recipe because of their unique sweetness and tenderness. Also, be sure to use good-quality, fruity EVOO and flaky sea salt for the finishing touches — it makes a world of difference!

Ingredients
  

  • 3 large heirloom tomatoes, sliced into ½-inch thick slices
  • 1 (4.4 oz) burrata
  • 1-2 tablespoons extra virgin olive oil
  • Fresh basil
  • Sea salt and pepper

Instructions
 

  • Arrange the tomato slices on a serving platter. Top with fresh basil, salt, and pepper. Break open the burrata and place on top of the tomatoes. Drizzle EVOO liberally. Serve immediately.
