How to Make Spam Musubi without a Mold

Spam, rice, and seaweed — three simple ingredients to create the most amazing snack. If you are a Spam fanatic, this one is for you.

Spam holds a special place in my heart. In Cantonese food and specifically Hong Kong-style-cafe food, Spam or other luncheon meats is a staple. Growing up, some of my go-tos at HK cafes were Spam and egg macaroni soup and Spam sandwiches. To this day, one of my favorite dishes is Spam and egg on rice or instant noodles. There’s just something about its saltiness, fattiness, and crispiness when pan-fried that make Spam so addictive.

With that said, these musubi are another one of my favorite ways to enjoy Spam. Whenever I make Spam musubi, I like to make a ton of them so that I can always have them on hand as a snack or a quick lunch. Let’s get right to it!

Ingredients

  • 1 can Spam, sliced lengthwise into 8 even slices (I used the reduced sodium version)
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon water
  • 4 cups cooked sushi rice
  • 3 sheets nori, cut into 8 strips

Instructions

  • Step 1. Sear the Spam in a pan over medium heat. Cook each side for 2-3 minutes until it's crispy and has a golden brown color.
  • Step 2. Mix together sugar, soy sauce, and water in a small bowl. Pour mixture into the Spam and swirl to evenly distribute. Let the Spam simmer in mixture until the liquid is absorbed (1-2 min). Flip once in between.
  • Step 3. Take the Spam out of the pan and let cool before handling. Meanwhile, clean the Spam can, let dry, and line with plastic wrap.
  • Step 4. Place ½ cup of rice into the lined can and a slice of Spam on top of the rice. Pat the rice and Spam down tightly to help the musubi form its shape. Then, lift plastic wrap out of the can to take out the musubi and finish by wrapping a slice of nori around it. Repeat this step for the rest of the Spam slices. Serve immediately.
